@siracusa@mastodon.social I remember in the 90s my father had a business associate that came to our vacation house, and he had a Newton. The handwriting recognition and PIM integration were features I saw a glimpse of with Palm ... but the Newton was definitely too far ahead of its time!

Another day, another opportunity to learn something new.

Today I learned about heat tint in stainless steel cookware.

Bought my first stainless steel pan in December.

Background: I learned to cook with cast iron when I was young. Started making breakfast, fried eggs and bacon when I was 8 years old. Eventually started cooking on non-stick cookware.

Now looking at alternatives to non-stick cookware.

@redcrew For frying of any sort I still use a big ol’ cast-iron frying pan. Every year or so I or someone screws up the seasoning and we have to re-season, which is dead easy. But in normal use, nothing sticks to it. And if it’s discolored you can’t tell. I hate cooking on stainless, have real trouble keeping things from sticking.

@timbray That's what I'm discovering with stainless steel, things stick to it.

I might end up returning to cast iron. The weight of the cast iron pan is more of an issue for me (similar to when I was 8 years old).

@redcrew@mstdn.social @timbray Carbon steel gives you the of both, but you can't really buy it pre-seasoned like cast iron.

But to address the elephant: if the discoloration is simply cosmetic, who cares?! Cooking is a functional art, and it doesn't matter what goes on "behind the curtain". If your pans are discolored and it's affected your food, you need to investigate those manufacturers, because that should not happen!

@timbray The de-DRMing is a hint fiddly to initially set up but pretty rock solid once you do it and as simple as drag and drop. I found the process of actually downloading the files in quantity to be the really hard part. There’s a bit of python on GitHub that works well enough, though you either need to read Chinese or make liberal use of google translate.

I did it not long ago for my 2000+ kindle books. Look in some of my recent past toots to a link to a write up I did of the process

And trying to mix parts of a locale (esp. currency and number formatting), and lack of cohesion across operating systems, makes EO a no-go until the OS suppliers "do the right thing".
