@thickurt@woof.group @brad Not cocoa powder, but a chunk of dark chocolate. (Or possibly Abuelita, Mexican spiced chocolate.) And some extra umami: fish sauce, Worcestershire sauce, colatura, or MSG.

(And this is one of the very few times I will side with Texas: the best chili has no beans.)

    @robert @thickurt The best vegetarian (bean) chili recipe we've made calls for ground toasted walnuts and dried shiitakes as natural MSG/umami boosters, so you could consider experimenting with those in a proper meat/beanless chili too.
